I visited the Farmer’s Market last night and bought a ton of supersweet cherry tomatoes, crookneck squash, tiny zucchini, fresh corn, and super yummy peaches. Tonight I made fritters cooked in olive oil from the tomatoes and zucchini and from store bought fresh dill (ouch was it expensive but worth it!) and mint from my garden. When it’s too cold to grow stuff outside I *must* grow some herbs in my kitchen window, don’t know how I will cook otherwise.
Tomorow I’m going to use up some of my prolific basil and make corn soup with tomatoes. I’m trying out recipes from Veganomican, a vegan cookbook - even though I’m not vegan I am vegetarian and the food is super yummy looking - perfect for summer (and post baby weight loss!)
I saw my Mom’s skyscraper sunflowers in her garden for the first time - they were the tallest ones I have ever seen. She kept shoving garden produce at me and I could of kicked myself for buying so much at the Farmer’s Market. I hate turning her down - walked away with some more crook neck squash - which my daughter promptly turned into a toy in the car on the way home.
Sometime this week I’m going to make my mom-in-law’s famous zucchini muffins. The last batch DH made didn’t turn out - but I drilled his Mom for every secret she has and hopefully my batch will work. Baking in Utah is tricky - the air is so dry strange things can happen. What’s your favorite way to use up zucchini?

I have Vegan Cupcakes Take Over the World by one of the same authors of Veganomican. If the recipes in your cookbook are half as good as the ones in the book I have, then they are out of this world! And I say that as a vegetarian who loooooves dairy products.

Shibaguyz - yeah it’s the first time I’ve been - the produce was so much cheaper (and tastier) than the store bought stuff - the nearest grown peach I’d eaten was shipped from CA - these are soooo much better
I think food from the farmer’s market is almost as delicious as growing it yourself. Plus its helping the local farmers out. Those dishes sound very yummy.
I love to stir-fry my veggies.
Don’t tell me Dill is expensive, I need some for making pickles. Drat. Glad you got a great farmer’s market harvest! Great pics!
